Japanese Black Beef accounts for 98% of Japanese Beef. It’s renowned for the excellent B.M.S. (Beef Marbling Standard), well-colored & fine-textured meat. Breed improvement of Japanese Black Beef started in 1900, as a result of a lot of trial and error, a brand named Japanese Black Beef “Wagyu” was certified in 1937. Nowadays, around 1,600,000 of Wagyu are being bred all over Japan.

Perhaps the most remarkable characteristic of Wagyu is the marbled red meat & fatty portions known as “Shimofuri” in Japanese.
